A Classic Gets Its Due

The Vietnamese city of Phú Quốc is the home of an ancient tradition of making fish sauce in wooden barrels, letting the salted anchovies age for almost three times longer than the standard six months. It’s a disappearing art, one being revived by the Vietnamese American sauce maker Red Boat. But tradition, in this case, plays well into the non-traditional. This sauce is so mellow, so rich in umami and swirling with complex flavor, it’s an amazing addition to anything that wants a meaty backbone. We love it in all kinds of non-Asian dishes, like chili, BBQ sauce, tomato sauce, stews, even Bloody Marys. (Hey, why not? Worcestershire sauce gets its complexity from anchovies, just like fish sauce.)
