Reared on wheat grass and organic barley, these birds are free to roam the land from the age of three weeks on. All that running, hunting, and pecking pays huge dividends in the meat, which is richly flavored, densely grained, and a far cry from the insipid wet cardboard flesh of factory fowl. Seasoned with salt and crushed pepper and simply roasted in a hot oven, this is poultry worthy of a celebration.

Norman Gunsell started farming in 1967, back when he was still in high school. He moved east from San Francisco to the town of Mountain Ranch, in the Sierra Nevada foothills, to the same plot of land he works today, and began raising organic birds.

Why We Love It
