The season for Button-Cap Chanterelles is short and sweet: Deep in the Canadian wilderness, these tender little mushrooms thrive on tufts of pale green caribou moss for just six to eight weeks. Then, they're gone. We aren't the only ones delighted by Button-Cap season--this time of year, you'll find the Chanterelles in the kitchens of Thomas Keller, Mario Batali and David Chang, to name a few. One of our favorite Button-Cap recipes is a pasta dish by Angelo Romano with cherry-pepper pickles, pecornio cheese and toasted bread crumbs. It's a gorgeous, golden dish.
