Rare, small and sweet, these mushrooms will remind you of maple syrup. Delicious with smoked meat or folded into pasta sauces, these mushrooms go beyond dinner. They're delicious and unexpected in desserts like custards, cookies or even ice cream. We like tossing them into bread pudding before baking.

Maple Mushrooms

Rare candy cap mushrooms, foraged by Wine Forest’s team of experienced pickers, are commonly used to sweeten dishes with the flavors of caramelized sugar or maple syrup. Connie Green, the founder of Wine forest and one of North America’s pioneers of wild food foraging, is committed to training and employing environmentally conscious harvesters. These mushrooms were picked using sustainable methods of foraging. These dried mushrooms are easily re-hydrated by soaking in water or stock for 15 minutes (10 minutes for the mousserons). These mushrooms offer home cooks a versatile, simple way to enjoy wild foraged mushrooms all year long.
