This "New York style" elk strip loin is sourced from Rotorua, the north island of New Zealand, a region commonly referred to as "the bay of plenty." This tender strip bares a flavoring close to a cross between beef and venison, with a sweet finish. This free-range elk meat shines when marinated with a sweet brown molasses, a touch of bourbon and flaky sea salt and then grilled over chicory coals until medium rare.
