These rabbits are sourced from Amish farms where they are humanely raised. Compared too often to its flavor sibling (chicken), rabbit is often overlooked for its star-quality tender sweet meat. Broadleaf Game scoured the country for the ultimate rabbit product, eventually striking gold upon discovering this paramount breed, a cross between the California and New Zealand white rabbits. Add rabbit to a paella, braise it with red wine and a medley of vegetables, or batter and deep fry it.

We love a little Southern comfort. Try marinating the rabbit in an overnight bath of tangy buttermilk. Then, dredge it in a mix of yellow cornmeal and white flour before dunking it in a golden bath of sizzling oil. Preparing your whole rabbit for frying is easier than you think, so don't be afraid! The saddles and loins are incredible for grilling or sautéing, and the hind legs and forequarters are delicious when braised or slowly roasted in a low heat oven."
