These tender cuts of meat are sourced from the legendary Nilgai and Black Buck antelope that freely graze upon grass amongst the Texas prairie, their newly adapted home since their introduction to the states from the plains of India and Pakistan in the early 1900's. Quickly seared and best served at medium rare, this dark red meat has a subtle, mild taste with a finely grained texture.
