Not Your Uncle's Antelope
Broadleaf Game sources two types of all-natural premier antelope breeds, the black buck and Nilgai. Hunted in the wild of the grassy Texas prairie, these animals graze on blooming rye clover that enhances its robust, wild and distinctive flavor with a lavish beefy finish. According to Tim Mitchell, son of Broadleaf founder, Mark Mitchell, "because they're harvested in the wild under a large estate, these antelope aren't stressed like other animals during the hunting season. Stress tends to seize up the muscles, which can lead to an overpowering gamey flavor." We love Broadleaf's antelope ribs because they're easy to cook; grilled or roasted with a simple seasoning of salt and pepper or elaborate spice rub, this meat is (as Tim Mitchell would say), "not your uncle's antelope."
