The essential Indian spice is ground to order, and comes in a very fine powder that’s quite strong (though not quite as strong as Whole Spice’s black cardamom). Its natural partners include chicken and duck, chocolate and vanilla, and even panna cottas, rice puddings and crème anglaise.

Spice Storage Tip

Spices can lose their luster quickly if stored in a warm location or exposed to light. Be sure to store them in a cool cabinet, and label them with the dates they were bought before popping them in there. Replace your ground spices every six months if possible—any longer and they will lose their potency. It makes the difference between a dull dish and having guests clamor for the recipe for your fabulous dessert or entrée.
