Céline Labaune, the woman who supplies truffles to the country's top chefs – Daniel Boulud, Thomas Keller, Michael Mina and Grant Achatz – sourced these peak season black truffles from growers in Western Australia where the climate and soil are similar to France's most famous truffle region, Périgord. Put simply: these are the best of the best; they are of the highest truffle-grade (which makes up less than 10% of the crop) with a strong aroma, intense flavor and even coloring. Shower paper-thin shavings of this truffle over life's simplest pleasures: fresh pasta with butter, soft scrambled eggs, or creamy mashed potatoes.

Summer of Truffles

In the early 90’s Australian growers began introducing truffle spores to the roots of young oak and hazel trees.  After decades of growing (some truffles take up to 12 years to mature) Australia has become one of today’s largest producers of black winter truffles during the months of June, July and August.  Before using the truffle, we like to wrap it in a paper towel and store it in an airtight container with unopened sticks of butter and eggs.  The truffle's aroma will intoxicate the butter and eggs!  You'll have homemade truffled butter to finish steaks or spread on baguette and truffle scented omelets for breakfast.  Try shaving slices of truffle over fresh pasta and drizzling the shavings with warm brown butter; the warmth of the butter will gently wilt the delicate slices and release the truffle’s intense perfume.  Rice, eggs, potatoes and cream are easily infused with the aroma of a truffle while garlic, chives, celery, leek and Parmesan are known to enhance a truffle’s flavor.

Use and Care

  • Black truffles are best enjoyed within a week of harvest.
  • To keep the truffles fresh for up to 14 days, wrap dry truffles in a paper towl and store in a dry, air tight container in the crisper compartment of the refrigerator.
  • Change the paper towel daily.
  • To clean a truffle, gently brush dirt off the skin with a soft bristled brush.
  • It is okay to use a small amount of warm water to help wash the truffles, but they should not be submerged or soaked in water.
  • Truffles can be wrapped individually in foil and placed in the freezer. Frozen truffles will last for up to three months.
  • Some truffles grow a small amount of white mold. Simply brush the mold off the truffle with a soft brush and cold water, if necessary.
