It’s not your average goat cheese. This cave-aged rendition comes complete with a silky edible rind over an ash-covered tangy interior that bears great resemblance to the snow-capped mountains in Colorado from where it comes. Tremblay Apiaries Honey helps bring out the subtle sweetness in the goat milk.

Murray's Cheese, owned by Rob Kaufelt, is not only one of the country's oldest cheese distributors, but also one of its finest affineurs, or cheese finishers. Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.

After your order is processed, your cheese will be cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday. You will receive an email notifying you of the ship date.

 

Aging Gracefully

The term “goat cheese” often conjures up images of fresh, tangy, soft and stark-white chevre, but Haystack Peak provides a shining example of a lightly aged alternative. Jim Schott transforms the milk from his herd of 100 goats into a more mellow goat cheese with lingering hints of hay, grass and a light, milky tang. As it ages, the rind ripens the cheese, allowing it to lose moisture, concentrate the salt content and convert the sharp citrusy notes of a fresh chevre into more mild and minerally aromas and flavors.

Use and Care

  • Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
  • To serve, remove your cheese from the refrigerator an hour before eating to bring to room temperature
  • Cheese needs to breathe, so do not wrap it in plastic wrap
  • Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
  • Young cheese such as Haystack Peak will remain fresh for 1 week if properly stored
