A reinvention of the typical green tea, this blend lives up to its celestial name. Master tea blender Shane Talbott prefers to work with Japanese Sencha green tea, because the leaves are steamed rather than fermented in the Chinese method. This creates a sweet, mellow taste without any of the bitter, grassy flavor commonly associated with the drink. Purple mallow flowers and dried berries help round out the brew, giving it a fruity, floral finish.

Why We Love It

It’s all in the color: While both green and black teas come from the same Camellia Sinensis plant, their vast flavor difference happens during processing. When tea leaves are crushed and fermented, a fully oxidized black color results, whereas the green variety is made with leaves that are steamed or withered, allowing no oxidation to occur. While the lighter version has a mellow, sweet flavor, the roasting that creates black teas gives them more depth, allowing bold flavors that cover spicy, floral and chocolate-y notes. And while both are caffeinated, black tea contains two to three times the amount, making the green variety more friendly to those sensitive to caffeine.
