Although Parmigiano-Reggiano reigns as the King of cheeses, it’s got a sweet side that most people don’t see. The Boat Street Pickled Figs—with equal intensity of bright balsamic vinegar and syrupy sweetness—bring out the inherent characteristics in this full-bodied formaggio. Notice notes of browned butter and roasted nuts, as well as the characteristic crunch you get from the seeds of the figs and the amino acid that cluster in the cheese during aging.

After your order is processed, your cheese will be cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday. You will receive an email notifying you of the ship date.

 

Parmigiano-Reggiano

Parmigiano-Reggiano remains a pantry staple for good reason: It lasts a long time. What contributes to its great aging potential?

  • Cheesemakers cut the curd into small pieces. The large amount of surface area gives the curd every opportunity to let out whey—or moisture.
  • They cook the curd; raising the temperature helps to drive off more moisture, and also imparts cooked milk flavors to the final flavor like caramel, browned butter and roasted nuts.
  • They soak each wheel in a saturated salt solution for one month; this helps to draw out additional moisture and contributes to the dry, craggly finished texture.

Use and Care

  • Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
  • To serve, remove your cheese from the refrigerator an hour before eating to bring to room temperature
  • Cheese needs to breathe, so do not wrap it in plastic wrap
  • Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
  • Aged dry cheese like Parmigiano-Reggiano will remain fresh for 1 to 2 months when properly stored.
