Murray's Cheese, owned by Rob Kaufelt, is not only one of the country's oldest cheese distributors, but also one of its finest affineurs, or cheese finishers. Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.
After your order is processed, your cheese will be cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday. You will receive an email notifying you of the ship date.
To D.O.P. or Not to D.O.P?
That is the question. Name protection was designated by the European Union as a way for producers of traditional food products to band together and market more efficiently. In Italy the products are denoted as D.O.P (translating to Denomination of Protected Origin). Cheeses listed as D.O.P. simply mean that they come from a specific place and follow the traditional cheesemaking methods outlined for that particular cheese. Should you shy away from cheeses that don’t carry the coveted D.O.P. stamp? Not necessarily. The Quadrello di Bufala and Podda Classico are relatively new Italian cheese that are worth trying. They may not boast centuries of tradition, but they are quickly becoming among the favorite formaggi we can access from abroad.

Use and Care
- Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
- To serve, remove your cheese from the refrigerator an hour before eating to bring to room temperature
- Cheese needs to breathe, so do not wrap it in plastic wrap
- Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
- Soft cheese such as Quadrello di Bufala will remain fresh for 1 to 2 weeks if properly stored
- Aged cheese such as Podda Classico will remain fresh for 2 to 3 weeks if properly stored
- Refrigerate salami after opening; cover loosely with wax paper
- We recommend removing the casing on the salami prior to eating
- Store pantry items in a cool and dry place; they will remain fresh up to 3 months
