And, since we’re Brooklyn-based Francophiles (who love beer), we had to include grain beer mustard, made in our neighborhood.

Murray's Cheese, owned by Rob Kaufelt, is not only one of the country's oldest cheese distributors, but also one of its finest affineurs, or cheese finishers. Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.

After your order is processed, your cheese will be cut to order and wrapped in cheese paper. This package will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday. You will receive an email notifying you of the ship date.

 

A.O.C.

Name protection was designated by the European Union as a way for producers of traditional food products to band together and market more efficiently. In France, these products are denoted as A.O.C (translating to Appellation of Controlled Origin). Cheeses listed as A.O.C. honor centuries of cheesemaking tradition. Each designation of origin is tied to a specific geographic location and allots only producers who follow strict guidelines to grace their products with the coveted A.O.C. titles. Among France’s most famous A.O.C. offerings is Comte St. Antoine—made exclusively in the Jura Alpine region—and paired best with the funky, oxidized white wines born in the same place.

Use and Care

  • Refrigerate cheese and cornichons upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
  • To serve, remove cheese from the refrigerator an hour before eating to bring to room temperature
  • Cheese needs to breathe, so do not wrap it in plastic wrap
  • Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
  • Soft cheeses such as Cremeux d'Argental will remain fresh for 1 to 2 weeks if properly stored
  • Aged cheeses such as Comte will remain fresh for 2 to 3 weeks if properly stored
  • Refrigerate Saucisson Sec after opening; cover loosely with wax paper
  • We recommend removing the casing on the Saucisson Sec prior to eating
