We’re hesitant to clump this into the blue category, as this cheese stands alone. The rich, nutty water buffalo milk, usually reserved purely for fresh mozzarella production, lends a sweet backdrop that envelops the mild-yet-earthy blue mold. Slightly gamy, salty, tart, and creamy, the rustic rind and distinctive square shape further our confusion. But at a certain point, we don’t care what you call it: this Blu di Bufala is simply divine.

After your order is processed, your cheese will be cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday. You will receive an email notifying you of the ship date.

 

Bergamo Buffalo

In a nation known for centuries of food tradition it’s odd to find such an adventurous diversion from the norm but we’re glad it exists. And we have two brave brothers, Bruno and Alfio, to thank for that. They deviated from their Bergamo-based standard cattle operation in 2001 by importing some water buffalo from southern Italy. By 2005, they’d made a splash with truly distinctive aged buffalo milk cheeses. This buffalo-based blue is particularly impressive alongside Moscato d’Asti from the neighboring Piedmont region.

Use and Care

  • Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
  • To serve, remove your cheese from the refrigerator an hour before eating to bring to room temperature
  • Cheese needs to breathe, so do not wrap it in plastic wrap
  • Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
  • Blu di Bufala will remain fresh 10-14 days if properly stored
