Murray's Cheese, owned by Rob Kaufelt, is not only one of the country's oldest cheese distributors, but also one of its finest affineurs, or cheese finishers. Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.
After your order is processed, your cheese will be cut to order and wrapped in cheese paper. This package will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday. You will receive an email notifying you of the ship date.
In a Pickle
Pickles provide a much-needed counterpart to luxurious cheeses: acid. For the perfect pairing acid cuts through the creamy paste and allows you to do what’s most important: enjoy more of both items. Although most folks turn to wine for their acid allotment, don’t overlook pickles. Renee Erickson of Seattle’s Boat Street Café does them best. Pickling is Renee’s way to preserve the bounty of a variety of fruits and vegetables, including figs, plums and raisins. Don’t limit them just to cheese, either. They are equally appropriate atop ice cream, on roast pork, or as an accompaniment to foie gras.

Use and Care
- Refrigerate cheese upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
- To serve, remove your cheese from the refrigerator an hour before eating to bring to room temperature
- Cheese needs to breathe, so do not wrap it in plastic wrap
- Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
- Aged, dry cheese like Parmigiano-Reggiano will remain fresh for 1 to 2 months when properly stored
- We recommend removing the casing on the salami prior to eating
- Refrigerate olives and pickled figs after opening
- Store olive oil and vinegar in a cool, dry place
- Pantry items will remain fresh for up to 3 months
