Why We Love It
These large filled chocolates are where Michel Richart shows his chops. It takes an eight-step process to transform the humble cocoa bean to the finished product. The beans are fermented when ripe, roasted and then ground up, conched to smooth the chocolate’s texture, the infused, reduced, emulsified and finally tempered. The technique is long and laborious, but all this hard work pays off once you take a bite of these classic chocolates.
