Why We Love It

And La Valletta’s legumes and grains aren’t just any old beans: La Valletta’s brother-sister team, Alessandro and Rosalba Cappelletti, grows their grains and legumes organically and are dedicated to preserving the native plants of the Colfiorito Plateau. Their many unique varieties include the region’s famous white beans, Fagioli Purgatorio, and Cicerchie, a short, tan bean that is an ancient cousin to the chickpea. Once in danger of extinction, this classic ingredient of la cucina povera (peasant cooking) has regained popularity and makes a fabulously nutty addition to cold salads and soups.  Melissa Clark's bright and healthful toasted farro salad, made with pine nuts, crispy pecorino, and caramelized corn, is a fitting tribute to the semi-pearled, malty-flavored grain.
