Pimentón, Please!
Pimentón de la vera hails from Extremadura in western Spain. Ripe, hand-harvested chiles are smoked over oak wood, then ground using emery stones. The resulting smoky-sweet spice is distinctive for its deep-red color, which indicates superior quality. In fact, the color is measured in what are called ASTA units (the higher the number, the brighter the color and more concentrated the flavor). The minimum units required for a paprika to be called pimentón de la vera is 90; Le Sanctuaire’s weighs in at 120. It’s light years beyond standard paprika in flavor; sprinkle it over a baked potato with sour cream, or add it to the tomato base of a Portuguese fish stew or Mexican huevos rancheros. Toasted in a dry skillet, it makes for the great chili spice base along with garlic, onions, cumin, oregano and coriander.
