Why We Love It
Coriander seeds’ warm, nutty, slightly sweet and citrusy flavor doesn’t fully develop until completely dried. These dry in the shade, which helps protect their pretty golden hue. Le Santcuaire’s seeds are light-colored, round and ribbed, with very little splitting and a pleasantly strong aroma. We love to grind them up with cumin seeds and toast them in a dry, hot skillet with paprika and a bit of cinnamon, add onion and garlic with oil, and start the base of a great black bean chili or mole (add chopped dried apricots and raisins at the oil stage, and toss in chocolate to finish).
