Tea Time

There’s something about tea that it makes the drink of choice among rabble-rousers. In the years between tea parties in the States, tea drinkers in 19th century Japan caused a stir by swapping matcha, ground green tea, with sencha during tea ceremonies. Some sought to rebel against tea ceremony traditions, which call for matcha, while others simply preferred sencha’s savory taste. To brew the perfect cup, be aware of the three "Ts:" (water) temperature, (steeping) time and total (amount). Steep one teaspoon of Zairai Sencha with eight ounces of 170-degree water for about three to four minutes. The tea is certified organic in the United States as well as the far-stricter European Union and Japan.
