This is a tea for coffee lovers. The leaves are roasted, which releases rich, tawny flavors like coconut and dried peach. The Iron Wu'Long is also a rolled tea, which means that the withering tea leaves are formed into small balls in round, cloth bundles. The benefit: The leaves unfurl as they steep, creating new layers of flavor just as a wine changes as it opens up. To experience the variations, use a tea strainer and pour yourself a tasting of multiple small cups.

Why We Love It

Chef Dominique Crenn of San Francisco’s Atelier Crenn likes to pair this tea with chocolate, which brings out its warm, toasty flavors. To brew the perfect cup, be aware of the three "Ts:" (water) temperature, (steeping) time and total (amount). Steep one tablespoon of Iron Wu'Long with eight ounces of boiling water for five to seven minutes. The tea is certified organic in the United States as well as the far-stricter European Union and Japan.
