Considered a "best choice" by environmental groups, and among the best fish we've ever eaten, this black cod, AKA sablefish, AKA gindara (when presented as a sliver of tender sashimi) is renowned for its buttery texture and versatile flavor profiles. Line-caught in Alaska, it pairs wonderfully with hoisin and miso, and peppers and fennel alike.

Here's what you get:

Why We Love It

In the United States, black cod glazed with miso has been a famous preparation—delicious and rather simple—for a decade. After you’ve had it once, you’ll crave it again and again. This particular cod—super-fresh and shipped straight from a small  Alaskan co-op—lets the home cook mimic restaurant cuisine. In addition, the Monterey Bay Aquarium Seafood Watch declares Alaskan line-caught practices to be the best option for harvesting black cod. At home, try it glazed with tamarind and served with salsa (an Alsatian Riesling is lovely with this combo), slicked with miso or hoisin for an Asian inflection (try Chardonnay, in this case), or grilled with fried garlic and chiles (we love it washed down with a rosé).
