Claire Marin left a career in magazine publishing to make honey full time. She and her partner, Cathy, now live on a farm in upstate New York, where they raise turkeys and chickens, work in their garden and sell their honeys to top New York restaurants. Inspired by the gorgeous maple trees around them, they recently added maple syrup to their offerings.

Bee Grateful
At Catskill Provisions’ farm, bees feed on 32 pesticide-free acres of flowers, fruits and vegetables. Claire harvests this wildflower honey in the spring, which lends it delicate aromas of pear and apple blossoms. It begs to be paired with cheese: Serve some with a knob of goat cheese, a wedge of blue and a few cherries for a sophisticated beginning (or ending) to a fine meal. Maple syrup is a new addition: When the farm’s fall honey started to taste like maple syrup (from bees pollinating nearby maple trees), Claire and Cathy decided to install their taps. They filter their syrup 12 times, which results in a grade A sweetener that is full-flavored yet incredibly light-bodied. Add it to cheesecake crusts and fillings, or drizzle it over roasted root vegetables. It’s also great at breakfast, of course, particularly drizzled over snappy breakfast links.

Use and Care
- Store honey in a dry place.
- Raw, unpasteurized honey keeps indefinitely but is is prone to crystallization.
- To decrystallize the honey, place the jar in a pot of hot water that comes to just below the lid, and warm the honey until clear.
- Catskill Provisions does not use pesticides or synthetic fertilizers on its farm.
Method of Production
- All honeys are certified kosher by KOF-K.
- Light wildflower honey is harvested in the early spring and summer; dark honey is harvested in late summer and early fall.
- Maple syrup is sourced from local maple trees and filtered multiple times, then placed in an oak-fired evaporator and heated to high temperatures.
