There's a jar of light, floral wildflower honey harvested in the spring, a darker honey with chestnut and maple notes harvested in the autumn, and a delicate round of honeycomb. Claire Marin left a career in magazine publishing to make honey full time. She and her partner, Cathy, now live on a farm in upstate New York, where they raise turkeys and chickens, work in their garden and sell their honeys to top New York restaurants. Inspired by the gorgeous maple trees around them, they recently added maple syrup to their offerings.

Darling Honey

Excellent honey is an ingredient that knows no bounds: Bake tea breads. Layer them with butter. Drizzle them with honey. Put it in your tea. Experiment with desserts. Raw wildflower honey is more delicate and less pungent than its sibling clover, and was made with aficionados in mind. Catskill Provisions, on the banks of the Delaware in the Catskill Mountains, keeps their 32 acres of fruits, flowers and vegetables free from pesticides. “Happy Bees Make Better Honey” is their motto, and they’re right. Light wildflower is slightly less intense than the dark honey harvested in fall. They’re both wonderful. As for that honeycomb, we’re simply smitten.
