These came from the rolling hills of Illinois, cared for by a 16-year-old farmer named Walter Moser who fed them all-natural corn and let them roam in large contained areas. Halve, brown and roast the birds quickly on high heat with thyme, sage, and serve with a crisp smattering of bacon and a buttery glass of Chardonnay, or glance around the spring farmer's market, stew them with bright tarragon and asparagus, and serve with a grassy Sauvignon Blanc.

Pretty Birds

Cornish game hens are the perfect stand in for chicken.  Our resident recipe guru, Melissa Clark, even provides notes for subbing game hen in for chicken in her simple Skillet Chicken with Green Onions and Ramps recipe.  Clark explains that Cornish game hens, bred to be smaller and plumper than a regular chicken, are perfect for white meat lovers.  “With their squat little legs, Cornish hens are all about the breasts.”  Weighing between 1 and 3 pounds, Clark says one bird will serve, “one person quite amply, two people more modestly, but still adequately if you’re generous with the side dishes.”
