Entertain Like an Italian

When food writer Jeffrey Steingarten says an Iowan company makes "the best American or imported prosciutto I’ve ever tasted," and chefs like Mario Batali and Eric Ripert feature it on their menus, we snap to attention. This charcutier makes top-of-the-line meats using sustainably and humanely raised, antibiotic-free American pigs. Each meat uses only two or three ingredients—pork, sea salt, and sometimes spices, so the caliber of the meat shines. Lay a charcuterie plate with folds of prosciutto, speck, lonza and two types of coppa. Put out a ramekin full of whipped lardo, and provide crostini. Wrap some scallops in bacon, and serve them on skewers. BYO Italian wine.
