We love this cooking-friendly collection from a famous American charcuterier: Crumbled prosciutto and speck can be dropped into pastas. Pancetta comes two ways: Use the flat to wrap fish for grilling, and saut辿 the round for breakfast. Creamy lardo is brilliant on bread, and guanciale is essential to a real bucatini all'Amatriciana.

Here's what you get:

  • Two 6 oz bags of Prosciutto crumble
  • One 1 lb piece of Guanciale
  • Two 3 oz packages of Pancetta cubed
  • One 1 lb piece of flat Pancetta
  • One 6 oz bag of Speck crumble
  • One 7 oz jar of Lardo Spread

La Quercia Norwalk, Iowa

After years of working as a ranch hand and researching Agricultural Economics at UC Berkeley, Kathy Eckhouse joined forces with her husband Herb, a lover of prosciutto so much so that he spent 5 years learning to make his own, to form La Quercia. Inspired by their time in Parma, Italy, La Quercia's premium American prosciutto has attracted top-chefs nationwide.

Charming Charcuterie, Stateside

When Mario Batali bypasses Italian charcuterie for the Iowan version, you know it’s got to be good. La Quercia is an artisanal charcutier that makes top-of-the-line meats using sustainable practices and humanely raised, antibiotic-free American pigs. This collection comprises some of their best: Press rounds of pancetta under the skin of a chicken before roasting. Slice streaks of it to fry up with eggs. Crumbled prosciutto and speck are both fantastic in pasta, maybe with peas and a creamy sauce. Organic lardo and dreamy guanciale round out the package. Cook a different meat every day over a week. Just be sure to have some Italian wines handy.
