As any sushi-lover knows, when it comes to tuna, it’s all about the belly. Dress a few slices of velvety ventresca in olive oil and lemon and serve on a bed of crusty bread or fresh greens with chunks of hard-boiled egg and lashings of olives, capers, piquillo peppers, and olive oil. Simpler still, try roasting it briefly in the oven with a little olive oil and garlic, then serve on toast. You’ll never think of a tuna fish sandwich the same way again.
