More nuanced than prosciutto, more earthy than Serrano, this delicacy has only recently been allowed in America. Each slice of this cured ham is nutty from the acorns which pata negra, black-hoofed pigs, ate in the Spanish countryside.

In 1956 Fermin Martin Cambronell and his wife Victoriana Gomez opened a small butcher shop, 200 miles west of Madrid where they cured pure-bred Ibérico pigs, a descendant of wild Spanish boars that once roamed the Mediterranean shoreline. Now chefs from all over the world seek their meats and sausages produced exclusively from Ibérico pigs.

The Ibérico Pig

José Andrés, James Beard Award winner for Outstanding Chef, personally helped bring this very special meat to America in 2007, and proudly serves Ibérico in his restaurants from DC to LA. Even Ferran Adrià of El Bulli says “there’s nothing like it elsewhere in the world.” What makes it so special? The rare pata negra, a black-hoofed pig, who spends his time munching on acorns, grass and fruit. The resulting meat, cured for two years, is dreamily marbled, nutty, and incredibly memorable. It needs no partner except perhaps a small glass of Spanish sherry.
