Your steaks will arrive frozen via overnight shipping in an insulated box with gel packs to keep it cold. Because this meat has a higher fat content and was frozen soon after slaughter, the integrity of the meat is maintained throughout the freezing and thawing process. Mishima Ranch ships Monday through Thursday.
How We Love to Cook It
In Japan, wagyu beef is traditionally prepared by slicing it very thin and swishing it for just a second in hot water or broth; its fatty flavor is said be cleaner and more elegant that way. But American wagyu is produced for our taste for a thick, lusty grilled steak. By blending cattle breeds with classic American stock, and employing Japanese methods of pampering the herd, we get beef with unbelievable marbling and tenderness, but enough meatiness to stand up to high heat. We love these steaks simply prepared with generous salt and pepper, seared in a hot cast iron pan until medium rare.
