Mishima Ranch, named for the small island in Japan that was once the only home of full blood Wagyu cattle, manages cooperatives of small ranches in Northern California committed to sustainably raising American Wagyu cattle.
Your steaks will arrive frozen via overnight shipping in an insulated box with gel packs to keep your meat cold. Because this meat has a higher fat content and was frozen soon after slaughter, the integrity of the meat's texture is maintained throughout the freezing and thawing process. Mishima Ranch ships Monday through Thursday.
Why We Love It
Mishima Ranch’s American Wagyu cattle are the result of breeding Angus heifers with full blood Japanese Wagyu bulls. Crossbreeding was a necessity in developing the American Wagyu, as Japanese Wagyu were too sensitive to the ranching methods and climate in the United States. Mishima didn’t stop with a 50/50 blend; their 50% Wagyu females were bred again with 100% Wagyu bulls, resulting Mishima’s American Wagyu, a domestic breed with a uniquely high Japanese Wagyu bloodline. We love these steaks, simply prepared with a generous shower of salt and pepper, and seared in a hot cast iron pan until medium rare. The incredible marbling in these steaks makes them buttery and fork tender.
