This New Jersey farm along the Appalachian Trail has been raising the hogs for two years, letting them range freely over fifteen acres for most of their lives. Mangalitsa is among the best meat we’ve ever eaten, and this collection highlights it: Spicy Italian sausage is kicked up with pepper flakes, breakfast links contain a touch of maple, beer bratwurst is as great as it sounds, and bacon—jowl and belly—is some of the best you’ll ever eat.
