Murray's Cheese, owned by Rob Kaufelt, is not only one of the country's oldest cheese distributors, but also one of its finest affineurs, or cheese finishers. Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.
All of Murray's cheeses are cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday.
Cave Aging
Murray’s has operated its own cheese caves since 2004, finishing and maturing world-class selections to their ideal ripeness. Époisses, known to many as the "King of Cheese," is slightly gooey and gorgeously unctuous at its peak. Past peak, it becomes bitter. This package showcases the brilliance of the Murray's fromager: There's a perfect pyramid of Valençay, creamy with goat's milk and sprinkled with edible ash. Uplands Cheese Pleasant Ridge Reserve from Wisconsin, with its hint of butterscotch, is a staff favorite, as is a buttery triple-crème from Champlain Creamery. This package also includes a box of crackers, so you won't have to wait a single extra second to start tucking in.

Use and Care
- Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
- To serve, remove your cheese from the refrigerator an hour before eating to bring to room temperature
- Cheese needs to breathe, so do not wrap it in plastic wrap
- Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
- Époisses will remain fresh 10-14 days if properly stored
- Valençay and Champlain triple-crème will remain fresh 10-12 days if properly stored
- Pleasant Ridge will remain fresh 14-20 days if properly stored
- Store crackers in a cool and dry place
