An expert charcutier has been making their sausages by hand since 1985, and we love his unexpected combinations: a Basque link is made with Piment d’Espelette (a pepper from that part of Spain), tender lamb mingles with fennel, pork Toulouse sausages burst with allspice, caraway and nutmeg. On the simpler side, there’s lamb Merguez and Andouillette sparkling with mustard. All are wonderful grilled and sliced on a wooden board with a ramekin of mustard, fruit and lightly-dressed greens. Serve with Gigondas, berry-laden Rioja or peppery Syrah.
