Crafting dried sausages is a tricky, even tedious business. Under the experienced eye of Fabrique Délices' charcutier, seasoned meat is twisted into links, and hung to dry in a temperature- and humidity-controlled environment. Over the course of weeks, even months, as the moisture evaporates, the flavor intensifies until the chewy, unctuous sausages are ready for the charcuterie board.  Try Melissa Clark's crostini recipe for prosciutto, radish and butter with another cured pork substitute, thinly sliced coppa.
