When we're determined to convey the charm of blue cheese to non-believers, Persille de Beaujolais makes a cameo on our cheese boards. Its gorgeous rind, the product of cave-aging in the French Alps, is as golden and mottled as a Klimt painting. More subtle than many blue cheeses, it is buttery and earthy, with foresty mushroom and juniper notes. This blue is a fine partner" as its name suggests" for a light Beaujolais.

Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.

All of Murray's cheeses are cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday.

 

Parsley Blue

Persille, French for “parsleyed,” describes the blue-grey mold that prettily spirals through this sweet cow’s milk cheese from the caves of the Rhone-Alpes. This beautiful, non-threatening blue would be delicious any season, and looks particularly gorgeous on a serving tray alongside figs, apricots, and little glasses of Beaujolais or sweet, pungent Sauternes.

Use and Care

  • Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
  • To serve, remove cheese from the refrigerator an hour before eating to bring to room temperature
  • Cheese needs to breathe, so do not wrap it in plastic wrap
  • Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
  • Blue cheese will remain fresh 14-20 days if properly stored
