Staff favorite and French classic, Morbier (which is similar to Comté ) has been improved even further by an exclusive-for-us wash in Brooklyn Brewery's Brooklyn Local 2. A Murray's fromager gently brushes the Belgian-style ale over the rinds, lending a fruity, malty counterpoint to the sweet, semisoft interior.

Murray's Cheese, owned by Rob Kaufelt, is not only one of the country's oldest cheese distributors, but also one of its finest affineurs, or cheese finishers. Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.

All of Murray's cheeses are cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday.

 

Murray's Special Wash

Once upon a time, the legend goes, cheesemakers in the French Jura mountains would sprinkle spare Comté curds with ash in order to protect them from flies until they could be amplified with the morning’s bounty. Nowadays, this ash is fully edible, but the cheese is still the the result of both morning and evening milkings, lending it the delicacy, nuttiness, and panache of a Comté. Best of all, Murray’s has washed a limited number of wheels in Brooklyn Local 2, the buzzed-about artisanal Belgian-style ale from Brooklyn Brewery. This adds malty, sweet elements to the creamy, hearty Morbier. Pair with a Belgian-style ale or a lush red from the Rhône Valley.

Use and Care

  • Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
  • To serve, remove cheese from the refrigerator an hour before eating to bring to room temperature
  • Cheese needs to breathe, so do not wrap it in plastic wrap
  • Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
  • Morbier will remain fresh 7-10 days if properly stored
