We feed this sweet little number to friends who claim to loathe goat's milk. Light, bright and creamy, it has none of supermarket goat cheese's crumbly, dry characteristics. We love it packed into a picnic basket, tucked under the skin of a roast chicken with sage leaves, or solo, with baguette and a glass of grassy Sauvignon Blanc.

Murray's Cheese, owned by Rob Kaufelt, is not only one of the country's oldest cheese distributors, but also one of its finest affineurs, or cheese finishers. Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.

All of Murray's cheeses are cut to order and wrapped in cheese paper. Once your order is processed, this cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. Expect an email notifying you of the ship date. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday.

 

Goat Cheese is for Lovers

Petit Billy is a creamy, fresh goat cheese with a slight milky tang that hails from the medieval town (complete with fairytale castles and tall stone turrets) of the same name in France's Loire Valley.  We love it in the summertime when matched with stone fruits or crumbled over salads. Seek out a grassy, sprightly Sauvignon Blanc for a classic pairing—or a glass of bubbly if you're feeling celebratory.

Use and Care

  • Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
  • To serve, remove your cheese from the refrigerator an hour before eating to bring to room temperature
  • Cheese needs to breathe, so do not wrap it in plastic wrap
  • Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
  • Fresh cheeses will remain fresh for 7 days if properly stored
