Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.

All of Murray's cheeses are cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday.

 

The Skinny on Tomme

“Tomme” is a type of French cheese that may land on your cheeseboard in many guises. It may be raw or pasteurized, made from whole milk or skim. Murray’s suggests looking for a knobby, russet-colored round of cheese. Its paste should be “toothsome and sticky.” This tomme meets those standards, and then some. Velvety on the tongue, it has an aroma of wet straw—more appealing than it might sound. Tomme de Savoie hails from the Rhone-Alps region of France, and is surprisingly springy and approachable. Bold red wines from that part of the world make a fine pairing.

Use and Care

  • Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
  • To serve, remove cheese from the refrigerator an hour before eating to bring to room temperature
  • Cheese needs to breathe, so do not wrap it in plastic wrap
  • Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
  • Semi-firm cheese will remain fresh 14-20 days if properly stored
