Murray's Cheese, owned by Rob Kaufelt, is not only one of the country's oldest cheese distributors, but also one of its finest affineurs, or cheese finishers. Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.
All of Murray's cheeses are cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday.
Unusual and Rare
These staff favorites include Hittisau, a hard cheese with a definite nutty flavor. Made in small batches by an Austrian cheesemaker who was coaxed out of retirement by local farmers, it is a classic pairing with beer, pickles, and wurst. Creamy and redolent of truffles, Fromage de Meaux is the pasteurized version of the classic Brie and light years beyond the supermarket version. Valdeon is a heavily-marbled blue whose coat of Sycamore leaves looks gorgeous on the plate. It pairs beautifully with the pickled fig compote. The lovely Cremont—rich and creamy, with notes of crème fraîche—was created by Allison Hooper, one of America’s first female cheese artisans.

Use and Care
- Refrigerate upon arrival (we recommend the vegetable crisper, a slightly warmer and moister region than the rest of the fridge)
- To serve, remove your cheese from the refridgerator an hour before eating to bring to room temperature
- Cheese needs to breathe so do not wrap it in plastic wrap
- Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
- Fromage de Meaux and Cremont will remain fresh for 10-12 days if properly stored
- Valdeon will remain fresh 10-14 days if properly stored
- Hittisau will remain fresh 14-20 days if properly stored
- Store crackers and pickled figs in a cool and dry place
- Refrigerate figs after opening
