Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.

All of Murray's cheeses are cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday.

 

Easy Does It

From sashimi to sea urchins, fussy eaters need a gentle introduction to a good thing. Murray’s has carefully selected its most elegantly accessible cheeses: Gorgonzola cremificato, preferred by most Italians, has more creamy texture than the dull dolce served stateside (expect little pockets of blue rather than giant, intimidating streaks of it). Vermont chèvre is a sweet, mild classic, and pairs prettily with cherries and peaches. French double-crème Brie with a 60-percent butterfat content, will be a pleasant surprise, and Murray’s Select Reserve Gruyère is perfect with virtually any French red wine.

Use and Care

  • Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
  • To serve, remove cheese from the refrigerator an hour before eating to bring to room temperature
  • Cheese needs to breathe, so do not wrap it in plastic wrap
  • Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
  • Gorgonzola will remain fresh 14-20 days if properly stored
  • Chèvre will remain fresh 7 days if properly stored
  • Gruyère will remain fresh up to a month if properly stored
  • Brie will remain fresh 10-12 days if properly stored
  • Store crackers in a cool and dry place
  • Refrigerate fig jam after opening
