Once your order is processed, your caviar will be shipped for overnight delivery in recycled packaging with coolant to protect and maintain the temperature of the caviar. California Caviar Company ships on Tuesdays and Thursdays.

 

Why We Love It

This wild American caviar is sustainably harvested from Paddlefish in the Missouri and Mississippi rivers. Paddlefish, also known as “Spoonbills,” mature at 5-6 years of age, weighing up to 70 pounds. Similar in appearance and flavor to pricey Caspian Sevruga, these pearls are dark, olive-grey with a robust, earthy pop. A toasty blini, dragged through nutty crème frâiche and topped with a spoonful of rich Paddlefish caviar, may just be our very favorite, balanced bite.

Use and Care

  • Refrigerate upon arrival
  • Serve caviar nestled in ice or a caviar served to keep cold
  • Lightly toast blinis in warm skillet
  • Unopened caviar will remain fresh for up to 5 weeks
  • After opening, consume caviar within 4 days
  • Blinis and crème frâiche will remain fresh for up to 4 weeks
  • Hand wash the mother of pearl spoons
