Founder Céline Labaune personally inspects each truffle she sells. When she’s not out hand-delivering to Michelin-starred restaurants like The French Laundry, she’s scouting Europe for artisans who take truffles and turn them into unique products.
Products are ground shipped Monday through Thursday, and are packaged carefully in bubble wrap and placed with peanuts in cardboard boxes.
A Game Changer
As a general rule, products containing white truffles should never be heated—the process masks, even ruins, their flavor—but in addition to serving this cream as a condiment, try adding a dollop to your cooking liquid to add complexity to a weekday braise, stew, or risotto.
