D’Artagnan rabbits are farm-raised on a diet of sweet alfalfa, oats and wheat, lending the meat a delicate, light flavor: Rabbit sausages are mild and slightly gingery, and loin is wonderful paired with ramps or wild mushrooms. Pork-lovers will flip for a wild boar tenderloin—the meat is incredibly porky and nutty—and sausages lightened by a hint of sage.
