Porcine of the Times
The Hungarian Steppe is the original home of the Mangalica (AKA Mangalitsa) pig. Having adapted well to its cold-weather climate, the pig is distinguished by a thick coat of curly hair that has earned it the moniker the “sheep pig.” A layer of thick, creamy fat also protects it from the elements. D’Artagnan pigs are humanely raised and given vegetarian feed. Their meat is cured 24 to 42 months, which allows its flavors to condense. The resulting meat has the hue of dark rubies, and is beautifully marbled. Hugely popular among top chefs nationwide, this extraordinary delicacy tastes the way a pig should taste—and is available poised on a beautiful serving stand, ready to enjoy.
