One bite of this MitiBleu—the Spanish-accented cousin to Roquefort—has us thinking big: Beautiful pastas dripping with melted cheese and an avocado salad; plates of chocolate and cheese; bulbous glasses of red wines. It is an ambitious cheese, and a gorgeous one. Set it out for a plate for an hour, then tuck in: The flavors will have bloomed. The funk and slight mineral tang linger, the texture is dreamily soft and spreadable. MitiBleu is a cheese-lover's cheese.

Cheesemakers from around the world entrust their wares to Murray's, which fine-tunes and finishes them in the company's Greenwich Village caves.

All of Murray's cheeses are cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday.

 

Creamy Crumbles

Raw sheep’s milk forms the base of this Spanish beauty laced with blue-green veins. Sheep grazing in the mountains of La Mancha have produced an exceptionally aromatic, mineral, pungent cheese. Murray’s recommends letting it come to room temperature to maximize creaminess (it will become almost paste-like). It would be the most-talked about piece on a cheese plate, but Miti Bleu also makes an ideal partner for crostini, salads, fruit, and even steak. Try it with Sauternes, Sherry, or even an off-dry Riesling.

Use and Care

  • Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
  • To serve, remove cheese from the refrigerator an hour before eating to bring to room temperature
  • Cheese needs to breathe, so do not wrap it in plastic wrap
  • Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
  • Blue cheese will remain fresh 14-20 days if properly stored
