Bryan Flannery, Jr. has been immersed in the meat business since sweeping the floors of his dad's famous butcher shop. Today, Bryan sells natural and sustainably raised meats in his own shop, Bryan's Fine Foods, under the watchful eye of the store's manager, his daughter Katie.
All steaks will arrive frozen via overnight shipping in an insulated box with coolant. Flannery's dry aged meats have an incredibly low water content which means the freezing and thawing processes won't affect the texture of the meat.
Why We Love It
Bryan Flannery is a very particular butcher. He has traveled the country in search of ranchers who sustainably raise hormone–free cattle, in wide open pastures chomping natural, locally–grown feed. This beef comes to Flannery from ranchers in Kansas who've met his fanatic expectations. After meats arrive in Flannery's family–owned butcher shop, the large, primal cuts are dry-aged in–house for at least 4 weeks. This aging process adds complex, lingering flavor to the beef and reduces its water content which will preserve the integrity of the meat's texture during freezing and thawing.
