Bryan Flannery, Jr. has been immersed in the meat business since sweeping the floors of his dad's famous butcher shop. Today, Bryan sells natural and sustainably raised meats in his own shop, Bryan's Fine Foods, under the watchful eye of the store's manager, his daughter Katie.
All steaks will arrive frozen via overnight shipping in an insulated box with coolant. Flannery's dry aged meats have an incredibly low water content which means the freezing and thawing processes won't affect the texture of the meat.

A Kansas City cut is a New York Strip steak, but with a bone. To grill this cut, quickly sear both sides of the steak and finish the cooking indirectly, with the wide bone down on the grill. Born into the meat trade, Flannery has vast, enviable experience working with meat and is on a quest to find and sell only the best. These tender, beautifully marbled steaks are dry–aged by Flannery himself, intensifying the flavors and preserving the integrity of the meat's texture during freezing and thawing.
